Recipe | Banana & Oatmeal Cake

Whenever I have bananas that are starting to become a little too ripe, I like to make a Banana Cake. This Banana Cake is made with oats and it’s so delicious. Enjoy!

Ingredients

  • 3-4 mashed ripe bananas (medium size)
  • 1/2 cup coconut oil
  • 4 eggs
  • 1 cup sugar (or agave sirup)
  • 2 cup all-purpose flour
  • 1 cup organic oats
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla Paste or vanilla sugar
  • 1/2 teaspoon cinnamon

Preheat the oven to 200C. Grease a loaf pan or a round 20cm cake pan. 

In a large bowl, combine the mashed bananas, oats, sugar, coconut oil, flour and eggs. Mix until combined. Stir in baking powder, salt, vanilla and cinnamon.

Pour the batter into the prepared cake pan. Transfer to the oven and bake until a fork inserted in the center comes out clean, about 40-45 minutes. You might need to cover the top with foil at the end of the baking time to avoid over-browning the cake.

Let the cake cool for 15 minutes before removing from the pan.

TIP: Bake this cake the day before to make it extra moist and yummy. Top it with melted dark chocolate or chocolate frosting and put it in the refrigerator to keep it fresh and cool.
