One recipe I’ve been twisting and perfecting for a while is this Christmas Spiced Banana Cake. It’s the perfect balance of festive spices and comforting sweetness, and I can’t wait to share it with you.
What makes this cake truly irresistible is the topping! The frosting combines the nutty richness of brown butter with the bright, zesty flavor of fresh orange juice. This unexpected pairing creates a creamy, flavorful finish that perfectly complements the spiced banana base, making every bite feel like a festive treat. 🎄
Christina’s Christmas Banana Cake Recipe
Preparation Time: 1 hour 15 minutes
Active Time: 20 minutes
Ingredients
For the Cake:
- 3 eggs
- 170 g sugar (approx. 2 dl)
- 2 tsp vanilla sugar
- 125 g all-purpose flour (approx. 2 dl)
- 1 tsp baking powder
- 100 g butter, melted and cooled
- 2-3 ripped bananas (approx. 2 dl)
- 2 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 tsp ground allspice
- 1 tsp ground cardamom
For the Frosting:
- 100g brown butter (Se how to make it below)
- 200g cream cheese
- 350g powdered sugar
- 1 tsp vanilla
- 1-2 tablespoon fresh orange juice
- Optional topping: 50g chopped sugar roasted almonds
Instructions
- Prepare the Batter:
- Beat the eggs, sugar, and vanilla sugar until the mixture is light and fluffy.
- In a separate bowl, combine the flour, baking powder, and spices (cinnamon, cloves, nutmeg, allspice, and cardamom).
- Gently fold this dry mixture into the egg mixture, alternating with the melted butter.
- Fold in the mashed bananas.
- Bake the Cake:
- Pour the batter into a greased loaf pan (approx. 1 liter capacity).
- Bake on the lower rack of the oven at 175°C (conventional oven) for about 45 minutes.
- Once done, turn the cake out onto a wire rack and let it cool.
- Prepare the Topping:
- To make brown butter; melt butter over medium heat in a small saucepan, stirring gently until it turns a golden brown and releases a rich, nutty aroma. Let it cool slightly, then mix it with the remaining ingredients in a bowl until the frosting is smooth and creamy. For a thicker consistency, simply add more powdered sugar.
- Add the Topping:
- Place the cake upside down on a serving platter.
- Spread the frosting over the cake and, if desired, garnish with chopped sugar roasted almonds.
- Serve and enjoy!
